Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until soft and translucent.

- Bring to a boil, reduce heat to low, and simmer for 10 minutes. Stir in reserved clam liquid and chopped clams; cook until clams are opaque.
- Stir in spinach, parsley, apple cider vinegar, thyme, cayenne pepper, and nutmeg. Cook for an additional 2-3 minutes or until spinach is wilted.
- Taste and adjust seasoning with salt if necessary.
