  2. In a small bowl, whisk together the coconut aminos, tamarind paste, lime juice, chili flakes, and honey; set the sauce aside.
  3. Heat avocado oil in a large wok or heavy skillet over medium-high heat.
  4. Add minced garlic and grated ginger to the oil; sauté for 30 seconds until fragrant.
  5. Add organic shrimp and stir-fry until they turn pink, about 3 minutes.
  6. Add cubed tofu and stir-fry for 2 minutes until lightly browned.
  7. Push everything to one side of the wok, pour the beaten eggs into the empty side, and scramble for about 1 minute until just set.
  8. Pour in the sauce, then add the cooked noodles and bean sprouts, tossing frequently for 1-2 minutes to heat through and coat evenly.
  9. Remove from heat, stir in sliced scallions and crushed peanuts, then serve immediately.
