  • 1 tbsp raw honey
  • 1 tbsp sesame oil
  • 1 tsp gochujang (fermented chili paste)
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 1 cup shredded carrots
  • 1 cup spinach
  • 2 eggs
  • 1 tbsp avocado oil
  • 2 tsp rice vinegar

Instructions

  1. Cook rice per package. Quick-pickle carrots in rice vinegar + pinch salt for 10 min.
  2. Mix coconut aminos, honey, sesame oil, gochujang, garlic, ginger into sauce.
  3. Brown beef in avocado oil over medium-high, drain excess fat. Add sauce, cook 2 min.
  4. Wilt spinach in same pan. Fry eggs sunny-side. Bowl: rice → beef → carrots → spinach → egg. Drizzle extra gochujang.
