What you'll need
- Cast iron skillet — Sears better than any non-stick; naturally non-stick once seasoned.
- Enameled Dutch oven — For braises, roasts, and one-pot mains.
- Instant-read thermometer — The only reliable way to nail doneness without guessing.
Instructions
- Heat oil medium. Brown beef, drain fat. Add onion, cook 4 min. Add garlic, all spices, cook 1 min.
- Add tomatoes, beans, broth. Bring to boil.
- Add pasta. Reduce to medium, cook uncovered 10–12 min stirring often until pasta is tender and sauce thickens; add a splash of broth if it dries before the pasta softens.
- Serve topped with shredded cheddar.
