Instructions
- Quick-pickle half the onion in vinegar + honey + pinch salt, 15 min.
- Sauté remaining onion in oil 4 min. Add garlic, chipotle, cumin, cook 1 min. Add tomatoes, simmer 5 min.
- Add chicken thighs, cover, simmer 18 min until cooked through (165°F). Shred with forks in pan.
- Warm tortillas. Fill with tinga, pickled onions, cotija, cilantro, lime squeeze.
