  • 2 large bell peppers, halved and seeded
  • ½ lb grass-fed ground beef
  • 1 cup cooked brown rice
  • 1 cup organic marinara sauce
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 tbsp avocado oil
  • ½ cup fresh mozzarella, sliced
  • fresh basil, salt and black pepper

  1. Preheat oven 375°F. Place pepper halves cut-side up in baking dish.
  2. Brown beef in oil, add onion, cook 4 min. Add garlic, Italian seasoning, cook 1 min. Stir in marinara and rice.
  3. Fill peppers with beef mixture. Top with mozzarella.
  4. Cover with foil, bake 30 min. Uncover last 10 min until cheese is golden. Garnish with basil.
