  • 1 bay leaf
  • 1/4 cup fresh cilantro leaves, chopped
  • 1 lime, juiced
  • 1 tbsp honey

  1. In a large heavy pot or Dutch oven over medium-high heat, warm the avocado oil. Add the beef pieces in batches, cooking until browned on all sides. Remove from the pot and set aside.
  2. In the same pot, add the chopped tomatoes, onion, garlic, and bell pepper strips. Cook until the vegetables are soft and fragrant, about 10 minutes.
  3. Return the beef to the pot with the vegetables. Stir in the beef broth, tomato paste, cumin, oregano, smoked paprika, honey, bay leaf, salt, and pepper. Bring to a simmer.
  4. Cover and simmer on low heat for 1 1/2 to 2 hours on the stovetop (or transfer to a slow cooker and cook on low for 7-8 hours), until the beef shreds easily with a fork.
  5. Remove the bay leaf. Use two forks to shred the beef into strands, mixing it back into the sauce along with the green olives. Simmer uncovered 5 more minutes to thicken slightly. Taste and adjust seasoning if necessary.
  6. Garnish with chopped cilantro and a squeeze of lime juice before serving.
