What you'll need
- Cast iron skillet — Sears better than any non-stick; naturally non-stick once seasoned.
- Enameled Dutch oven — For braises, roasts, and one-pot mains.
- Instant-read thermometer — The only reliable way to nail doneness without guessing.
Instructions
- Spread Dijon mustard on the inside of both bread slices, then layer pork, ham, Swiss cheese, and pickles. Close the sandwich.
- Brush the outside of both bread slices lightly with avocado oil.
- Heat a skillet over medium heat. Place the sandwich in the skillet and press it firmly with a heavy pan or foil-wrapped weight — a Cuban sandwich is pressed flat.
- Cook 3-4 minutes per side, pressing throughout, until the bread is golden and crisp and the cheese is fully melted. Slice diagonally and serve.
