What you'll need

Instructions
- In a large heavy pot or Dutch oven over medium-high heat, warm the avocado oil. Add the beef pieces in batches, cooking until browned on all sides. Remove from the pot and set aside.
- In the same pot, add the chopped tomatoes, onion, garlic, and bell pepper strips. Cook until the vegetables are soft and fragrant, about 10 minutes.
- Return the beef to the pot with the vegetables. Stir in the beef broth, tomato paste, cumin, oregano, smoked paprika, honey, bay leaf, salt, and pepper. Bring to a simmer.
- Cover and simmer on low heat for 1 1/2 to 2 hours on the stovetop (or transfer to a slow cooker and cook on low for 7-8 hours), until the beef shreds easily with a fork.
- Remove the bay leaf. Use two forks to shred the beef into strands, mixing it back into the sauce along with the green olives. Simmer uncovered 5 more minutes to thicken slightly. Taste and adjust seasoning if necessary.
- Garnish with chopped cilantro and a squeeze of lime juice before serving.
