What you'll need

Instructions
- Preheat your oven to 400°F (200°C). Scrub the potatoes, prick them a few times with a fork, and bake directly on the rack for 45–55 minutes until tender.
- While the potatoes bake, cook the diced bacon in a skillet over medium heat until crispy. Remove from heat and drain on paper towels.
- Let the potatoes cool until you can handle them, then halve lengthwise and scoop out the flesh, leaving about a 1/4-inch shell (save the flesh for another use).
- Brush the skins inside and out with avocado oil and sprinkle with sea salt. Place cut-side up on a parchment-lined baking sheet and bake 10 minutes until the edges crisp.
- Fill each skin with shredded cheese and bacon, and return to the oven for 8–10 minutes until the cheese is melted and bubbly.
- Top with a dollop of sour cream, chopped green onions, and freshly ground black pepper.
- Serve immediately while hot.
