Instructions

  1. Peel the plantains: cut off the ends, score the peel lengthwise, and pry it off. Cut the plantains crosswise into 1-inch-thick rounds.
  2. Place the rounds in a bowl of cold salted water and soak for at least 10 minutes, then drain and pat completely dry.
  3. Heat the avocado oil in a large skillet over medium heat (about 325°F). Fry the plantain rounds until lightly golden and just tender, about 2-3 minutes per side. Remove to a paper towel-lined plate.
  4. While the plantains are still warm, smash each round flat to about 1/4-inch thickness using a tostonera or the flat bottom of a glass or measuring cup.
  5. Raise the heat to medium-high. Return the flattened rounds to the hot oil and fry until deep golden and crispy, about 1-2 minutes per side. Drain on paper towels and sprinkle immediately with salt.
  6. In a small bowl, whisk together the olive oil, cilantro, apple cider vinegar, lime juice, allspice, oregano, salt, diced red bell pepper, red onion, and minced garlic to make the mojo. Taste and adjust seasoning.
  7. Serve the hot tostones with the mojo on the side for dipping.
