Instructions

- In a separate bowl, mix the oat flour or sunflower seed flour (1:1), coconut flour, and baking powder. Note: if using sunflower seed flour, the coating may develop a slight greenish tinge after baking due to a harmless reaction between the seed's chlorophyll compounds and the baking powder — this doesn't affect flavor or safety.
- Dip each onion wedge into the wet mixture, then dredge thoroughly in the dry flour mixture until evenly coated. Shake off any excess coating before placing on the tray.
- Place the onion root-side down on the baking sheet and bake for 25-30 minutes, rotating the tray halfway through, until golden brown and the petals are tender with crunchy edges. If the coating starts browning before 20 minutes, tent loosely with foil to prevent scorching.
