Instructions
- Brew the espresso and let it cool to room temperature.
- In a heatproof bowl set over a pan of barely simmering water, whisk the egg yolks, honey, and salt for 5–8 minutes until thickened and the mixture reaches 160°F. Remove from heat and cool to room temperature.
- Whip the cold heavy cream with the vanilla to soft peaks. Fold the mascarpone into the cooled yolk mixture until smooth, then gently fold in the whipped cream.
- Briefly dip each ladyfinger into the cooled espresso — about 1–2 seconds per side so they are coated but not soggy — and arrange a single layer in an 8x8-inch dish.
- Spread half the mascarpone cream evenly over the ladyfingers, then repeat with a second layer of dipped ladyfingers and the remaining cream.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight.
- Dust the top generously with cocoa powder just before serving chilled.
