Ingredients

- 1 can organic crushed tomatoes
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp coriander
- pinch cayenne
- 2 tbsp olive oil
- ¼ cup organic feta, crumbled
- fresh parsley and mint
- crusty sourdough to serve

What you'll need
- Ceramic non-stick pan — For eggs and pancakes without a fluoropolymer coating.
- Mixing bowls with lids — Nest and stack; lids turn prep bowls into storage.

Instructions
- Heat olive oil in large skillet over medium. Saute onion and pepper 6 min until soft.
- Add garlic and all spices, cook 1 min. Add tomatoes, simmer 8 min until thickened. Season with salt.
- Make 4 wells with a spoon. Crack an egg into each well. Cover and cook 5–7 min until whites are set but yolks runny.
- Top with feta, parsley, mint. Serve with sourdough.
