Ingredients

  • ¾ lb pastured ground pork
  • 2 cups fresh Thai basil leaves
  • 4 garlic cloves, minced
  • 3 Thai bird chilies, thinly sliced
  • 2 tbsp coconut aminos
  • 1 tbsp fish sauce
  • 1 tsp raw honey
  • 1 tbsp avocado oil
  • 1 cup organic jasmine rice
  • 2 fried eggs to serve

Instructions

  1. Cook jasmine rice per package.
  2. Heat wok or skillet over high until smoking. Add oil.
  3. Add garlic and chilies, toss 15 seconds. Add pork, spread and press, cook undisturbed 2 min until caramelized underneath. Break up and stir until no longer pink (160°F).
  4. Add coconut aminos, fish sauce, honey. Toss. Kill heat, fold in Thai basil. Serve over rice topped with fried egg.
