What you'll need
- Cast iron skillet — Sears better than any non-stick; naturally non-stick once seasoned.
- Enameled Dutch oven — For braises, roasts, and one-pot mains.

Instructions
- Cook jasmine rice per package.
- Heat wok or skillet over high until smoking. Add oil.
- Add garlic and chilies, toss 15 seconds. Add pork, spread and press, cook undisturbed 2 min until caramelized underneath. Break up and stir until no longer pink (160°F).
- Add coconut aminos, fish sauce, honey. Toss. Kill heat, fold in Thai basil. Serve over rice topped with fried egg.
