  1. Peel and slice the potatoes into even rounds; rinse under cold water to remove excess starch, then pat dry with a towel.
  2. Heat the avocado oil in a 10-inch heavy skillet over medium heat.
  3. Add the sliced onions to the pan and sauté until translucent, about 5 minutes.
  4. Add the potato slices to the pan, season with sea salt and cracked pepper. Cover and cook for 15–20 minutes, stirring occasionally until the potatoes are tender.
  5. Remove the potatoes and onions with a slotted spoon and drain, reserving about 2 tablespoons of the oil in the skillet.
  6. Whisk the eggs in a large bowl with a pinch of sea salt, then fold in the warm potato-onion mixture and let rest for 5-10 minutes so the potatoes absorb the egg.
  7. Reheat the skillet with the reserved oil over medium-low heat, pour in the mixture, and cook for 6-8 minutes until the edges are set and the bottom is golden.
  8. Place a large flat plate over the skillet, confidently invert the tortilla onto the plate, then slide it back into the pan cooked-side up and cook another 3-4 minutes until just set through.
  9. Let rest 5 minutes, garnish with chopped parsley, and serve warm or at room temperature.
