What you'll need
- Cast iron skillet — Sears better than any non-stick; naturally non-stick once seasoned.
- Enameled Dutch oven — For braises, roasts, and one-pot mains.
- Instant-read thermometer — The only reliable way to nail doneness without guessing.
Instructions
- Season chicken, dredge in flour, shake off excess.
- Heat olive oil + 1 tbsp butter in skillet medium-high. Cook chicken 3 min per side, golden and 165°F. Remove.
- Add garlic to pan, 30 sec. Add wine, reduce 1 min. Add lemon juice and capers, simmer 2 min.
- Swirl in remaining butter off heat. Return chicken. Serve over linguine, top with parsley.
