Instructions
- Cook rice per package.
- Heat oil in wok or skillet medium-high. Add curry paste, fry 1 min until fragrant.
- Add coconut milk, fish sauce, honey. Bring to simmer. Add chicken, cook 8–10 min until 165°F.
- Add snap peas and bell pepper last 3 min. Off heat, add lime juice. Serve over rice with herbs.
