Ingredients

  • 1 lb organic chicken thighs, cut into chunks
  • ½ cup full-fat Greek yogurt
  • 2 tsp garam masala (divided)
  • 1 tsp turmeric (divided)
  • 1 yellow onion, diced
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 can organic crushed tomatoes
  • ½ cup organic heavy cream
  • 1 tsp cumin
  • 1 tsp coriander
  • ½ tsp cayenne
  • 2 tbsp avocado oil
  • 1 cup basmati rice
  • fresh cilantro

  1. Marinate chicken in yogurt, 1 tsp garam masala, ½ tsp turmeric, salt for at least 20 min.
  2. Broil marinated chicken 8–10 min until lightly charred. Set aside.
  3. Saute onion in oil 7 min. Add garlic, ginger, remaining spices, 2 min. Add tomatoes, simmer 8 min.
  4. Blend sauce smooth. Stir in cream. Add chicken. Simmer 10 min until chicken reaches 165°F. Serve over rice with cilantro.
