What you'll need
- Cast iron skillet — Sears better than any non-stick; naturally non-stick once seasoned.
- Enameled Dutch oven — For braises, roasts, and one-pot mains.
- Instant-read thermometer — The only reliable way to nail doneness without guessing.
Instructions
- Marinate chicken in yogurt, 1 tsp garam masala, ½ tsp turmeric, salt for at least 20 min.
- Broil marinated chicken 8–10 min until lightly charred. Set aside.
- Saute onion in oil 7 min. Add garlic, ginger, remaining spices, 2 min. Add tomatoes, simmer 8 min.
- Blend sauce smooth. Stir in cream. Add chicken. Simmer 10 min until chicken reaches 165°F. Serve over rice with cilantro.
