What you'll need
- Cast iron skillet — Sears better than any non-stick; naturally non-stick once seasoned.
- Enameled Dutch oven — For braises, roasts, and one-pot mains.
- Instant-read thermometer — The only reliable way to nail doneness without guessing.
Instructions
- Cook rice. Mix coconut aminos, oyster sauce, sesame oil, honey, garlic, ginger, arrowroot + ¼ cup water for sauce.
- Blanch broccoli in boiling water 2 min, drain, pat dry.
- Heat wok over high until smoking. Sear beef in batches 1 min each side. Remove.
- Add broccoli, toss 1 min. Return beef, pour in sauce. Stir until thick and glossy, 1 min. Serve over rice with sesame seeds.
