Instructions
- Cook rice per package.
- Heat oil medium. Sauté onion 5 min. Add garlic, ginger, all spices, cook 1 min.
- Add tomatoes, simmer 5 min. Stir in coconut milk.
- Add cauliflower and chickpeas. Cover and simmer 15 min until cauliflower tender. Serve over rice with cilantro.
