What you'll need
- Cast iron skillet — Sears better than any non-stick; naturally non-stick once seasoned.
- Enameled Dutch oven — For braises, roasts, and one-pot mains.
- Instant-read thermometer — The only reliable way to nail doneness without guessing.
Instructions
- Mix lamb with cumin, coriander, cinnamon, allspice, garlic, parsley, salt. Form into 6 oval kofta.
- Mix yogurt, cucumber, lemon juice, salt for tzatziki.
- Heat avocado oil in skillet medium-high. Cook kofta 3–4 min per side until cooked through (160°F internal).
- Warm pitas. Serve kofta with tzatziki, herb salad, and pita.
