What you'll need

Instructions
- Preheat oven 450°F. Toss potatoes with 1 tbsp avocado oil, salt. Spread on sheet, roast 30 min turning once.
- Mix butter with chives, tarragon, garlic, pinch salt. Roll in plastic wrap, chill.
- Mix mayo, Dijon, lemon juice for aioli.
- Pat steaks dry, season generously. Heat remaining oil in cast iron, ripping hot. Sear 3–4 min per side for medium-rare (130°F). Rest 5 min. Top with herb butter.
