  • ¾ lb grass-fed ground lamb
  • 1 tsp cumin
  • 1 tsp coriander
  • ½ tsp cinnamon
  • ½ tsp allspice
  • 2 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • ½ cup full-fat Greek yogurt
  • ½ cucumber, grated and squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp avocado oil
  • 2 whole-wheat pitas
  • mixed herb salad to serve

  1. Mix lamb with cumin, coriander, cinnamon, allspice, garlic, parsley, salt. Form into 6 oval kofta.
  2. Mix yogurt, cucumber, lemon juice, salt for tzatziki.
  3. Heat avocado oil in skillet medium-high. Cook kofta 3–4 min per side until cooked through (160°F internal).
  4. Warm pitas. Serve kofta with tzatziki, herb salad, and pita.
