What you'll need
- Cast iron skillet — Sears better than any non-stick; naturally non-stick once seasoned.
- Enameled Dutch oven — For braises, roasts, and one-pot mains.
- Instant-read thermometer — The only reliable way to nail doneness without guessing.
Instructions
- Whisk together all marinade ingredients in a bowl. Add the chicken breasts, toss to coat, and marinate in the refrigerator for at least 30 minutes and up to 4 hours.
- While the chicken marinates, make the Mexi-Ranch sauce: whisk together mayonnaise, sour cream, lime juice, ranch seasoning, cumin, smoked paprika, cayenne, and fresh cilantro until smooth. Refrigerate until ready to use.
- Make a simple pico de gallo: combine diced tomatoes, minced white onion, diced jalapeño, fresh cilantro, lime juice, and sea salt. Let rest at least 15 minutes to meld flavors.
- Heat a grill or cast-iron grill pan over medium-high heat. Remove chicken from marinade and discard marinade. Grill chicken for 5–6 minutes per side until nicely charred and internal temperature reaches 165°F.
- Remove chicken to a baking-safe dish. Immediately top each breast with a generous drizzle of Mexi-Ranch sauce and a mound of shredded cheddar.
- Place under the broiler for 2–3 minutes until the cheese is melted and bubbling.
- Remove from broiler. Top with fresh pico de gallo and crispy tortilla strips. Serve immediately with lime wedges and additional Mexi-Ranch sauce on the side.
FAQ
Can I make this without a grill?
Yes — a cast-iron grill pan or regular skillet over medium-high heat works well. Sear for 5–6 minutes per side until cooked through. You can also bake at 400°F for 20–22 minutes, then top with cheese and broil as directed.
What is the tequila in the marinade for?
Tequila acts as a tenderizer (the alcohol helps break down protein fibers slightly) and adds a subtle agave flavor that complements the lime. It cooks off completely on the grill. Substitute with apple cider vinegar if you prefer alcohol-free.
