What you'll need
- Cast iron skillet — Sears better than any non-stick; naturally non-stick once seasoned.
- Enameled Dutch oven — For braises, roasts, and one-pot mains.
- Instant-read thermometer — The only reliable way to nail doneness without guessing.
Instructions
- Preheat oven to 375°F. Slice the sub rolls lengthwise, leaving a hinge. Open them and place cut-side up on a baking sheet.
- Layer provolone slices inside the rolls. Bake for 5–7 minutes until the cheese begins to melt and the roll is lightly toasted.
- Remove from oven. Layer the salami, turkey, and ham evenly inside each roll over the melted cheese.
- Top the meats with shredded romaine, tomato slices, red onion, green pepper rings, and banana peppers.
- In a small bowl, whisk together the olive oil, red wine vinegar, Italian herb blend, sea salt, and pepper to make the vinaigrette.
- Drizzle the vinaigrette over the fillings inside each sub.
- Close the sub, press gently, and slice diagonally. Serve immediately or wrap tightly in parchment for on-the-go.
FAQ
Where do I find nitrate-free deli meats?
Applegate Farms, Boar's Head (select uncured lines), and US Wellness Meats all carry nitrate-free Italian deli meats. Whole Foods Market carries multiple clean-label options in the deli section.
Can I make the rolls from scratch?
Yes — an organic spelt or whole-wheat Italian hoagie roll takes about 2 hours start to finish. Combine 3 cups organic bread flour, 1 tsp active dry yeast, 1 tsp sea salt, 1 tbsp olive oil, 1 tbsp dried Italian herbs, and 1 cup warm water. Knead, rise, shape into long rolls, rise again, and bake at 400°F for 18 minutes.
