Instructions
- In a medium bowl, combine the drained tuna, avocado oil mayo, Dijon mustard, celery, red onion, lemon juice, sea salt, and black pepper. Fold gently until evenly mixed.
- Preheat oven to 375°F (or broil setting). Slice the sub rolls lengthwise, leaving a hinge, and open them on a baking sheet.
- Spoon the tuna mixture evenly down the center of each roll.
- Lay 2 slices of provolone over the tuna in each sub.
- Bake or broil for 5–7 minutes until the cheese is melted and bubbly and the bread is toasted on the cut edges.
- Remove from oven and immediately top with shredded romaine, tomato slices, and cucumber.
