Instructions
- In a bowl, combine olive oil, honey, garlic, lime juice, orange juice, oregano, paprika, cumin, salt, and pepper. Reserve 1/4 cup of this mojo for basting, then massage the rest into the pork. Cover and marinate in the refrigerator at least 4 hours, preferably overnight.
- Preheat oven to 300°F (150°C). Place pork in a roasting pan, skin side up. Roast 3.5 to 4 hours, basting once or twice with the reserved mojo, until the meat is fork-tender (internal temperature around 195°F / 90°C).
- Increase oven temperature to 450°F (230°C) and roast 20-30 minutes more, until the skin is deeply crispy.
- Let rest 15 minutes. Serve with diced tomatoes and optional avocado slices.
