What you'll need

Instructions

  1. Preheat oven to 400°F (200°C). Grease a 9x13-inch baking dish with butter.
  2. Melt 2 tablespoons of butter in a large saucepan over medium heat. Add onion and cook until softened and translucent, about 5 minutes.
  3. Add minced garlic and cook for 1-2 minutes. Pour in the heavy cream, add the salt and pepper, and warm gently without boiling; remove from heat. This is your cream mixture.
  4. Arrange one-third of the sliced potatoes in the prepared dish. Sprinkle with a third of the thyme leaves and a third of the Gruyère, then pour over a third of the cream mixture.
  5. Repeat the layering twice more with the remaining potatoes, thyme, cream mixture, and cheese, finishing with a layer of Gruyère on top and dotting with the last tablespoon of butter.
  6. Cover with foil and bake 30 minutes, then uncover and bake 20-25 minutes more, until the potatoes are tender when pierced and the top is golden and bubbling.
  7. Let sit for 10 minutes before slicing into squares and serving warm.
