Instructions
- Rinse the salmon and pat it dry. Score the flesh side of the salmon in a crisscross pattern without cutting through to the skin.
- In a mixing bowl, combine dill sprigs, juniper berries, garlic slices, chopped chives, fresh dill leaves, honey, avocado oil, and salt.
- Lay a large sheet of plastic wrap on a baking dish. Place the salmon skin-side down in the center. Spread half of the seasoning mixture evenly over the scored side of the salmon, pressing gently to distribute it.
- Fold one corner of the plastic wrap over the top of the salmon, forming a packet without air bubbles inside. Repeat with the other three sides to seal tightly.
- Place the wrapped salmon in the fridge and allow it to marinate for 12-24 hours, turning once halfway through.
- After marinating, carefully unwrap the salmon. Rinse off any excess seasoning under cold water and pat dry.
