Ingredients

  • 2 lbs pastured pork shoulder
  • 1 cup organic ketchup (no HFCS)
  • 3 tbsp coconut sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp cumin
  • 2 cups shredded green cabbage
  • 1 apple, matchstick-cut
  • 2 tbsp avocado-oil mayo
  • 1 tbsp apple cider vinegar (slaw)
  • 8 small brioche buns
  • salt and black pepper

  1. Mix ketchup, coconut sugar, vinegar, Dijon, paprika, garlic, cumin for BBQ sauce. Reserve half.
  2. Season pork, place in slow cooker with ½ cup water and half BBQ sauce. Cook low 8 hours or high 4 hours.
  3. Shred pork. Toss with remaining BBQ sauce.
  4. Mix cabbage, apple, mayo, vinegar, pinch salt for slaw. Toast buns. Pile with pork and slaw.
