What you'll need
- Cast iron skillet — Sears better than any non-stick; naturally non-stick once seasoned.
- Enameled Dutch oven — For braises, roasts, and one-pot mains.
- Instant-read thermometer — The only reliable way to nail doneness without guessing.
Instructions
- Heat avocado oil in a heavy-bottomed pot. Sear chicken thighs on both sides until golden brown and set aside.
- In the same pot, add garlic, ginger, and pepper. Cook for about 2 minutes or until fragrant.
- Return chicken to the pot with onions and bay leaves. Stir to coat all ingredients in oil.
- Pour in coconut aminos and honey, cook for a minute to blend flavors.
- Add vinegar and coconut milk. Bring to a simmer without stirring for the first few minutes to let the vinegar mellow.
- Cover and reduce heat to low. Simmer 30-40 minutes until the chicken is tender and cooked through to at least 165°F. Uncover for the last 10 minutes to thicken the sauce slightly.
- Taste and adjust seasoning with salt if needed. Garnish with sliced green onions before serving.
