Instructions

- Add honey to the well along with olive oil, sea salt, and diced butter. Stir until mixture is crumbly.
- Gradually add filtered water while stirring with your hands until dough comes together.
- Knead on a floured surface for 5-7 minutes to form a smooth, elastic dough. Wrap in plastic wrap, refrigerate for at least 1 hour.
- On a well-floured surface, roll out the dough to about an even rectangle.
- Spread egg wash over the rectangle, leaving a quarter-inch border. Fold opposite sides towards the middle like book pages.
- Fold the resulting strip into thirds and let it rest covered with plastic wrap for 30 minutes. Repeat two more times.
- Preheat oven to 425°F (220°C) and bake croissants on a baking sheet for about 18-20 minutes or until golden.
