Traditional hibachi restaurants cook on a teppanyaki flat-top griddle — a large steel plate heated to 400°F+. At home, the closest equivalent is a carbon steel griddle pan or a well-seasoned cast-iron skillet on high heat.
The key is high heat and a wide flat surface. Carbon steel heats fast and achieves the same sear without a commercial griddle.
