What you'll need
- Cast iron skillet — Sears better than any non-stick; naturally non-stick once seasoned.
- Enameled Dutch oven — For braises, roasts, and one-pot mains.
- Instant-read thermometer — The only reliable way to nail doneness without guessing.
Instructions
- Mix lamb, egg, almond flour, cumin, coriander, cinnamon, half the garlic, half the mint, salt. Form into 12 meatballs.
- Brown meatballs in oil 3–4 min turning, remove. Saute remaining garlic in pan 30 sec. Add tomatoes and harissa, simmer 3 min.
- Return meatballs to sauce, cover, simmer 12 min until cooked through (160°F).
- Pour boiling broth over couscous, cover 5 min, fluff. Stir lemon juice into yogurt. Serve meatballs over couscous, top with yogurt and remaining mint.
