Instructions
- Peel and slice the potatoes into even rounds; rinse under cold water to remove excess starch, then pat dry with a towel.
- Heat the avocado oil in a 10-inch heavy skillet over medium heat.
- Add the sliced onions to the pan and sauté until translucent, about 5 minutes.
- Add the potato slices to the pan, season with sea salt and cracked pepper. Cover and cook for 15–20 minutes, stirring occasionally until the potatoes are tender.
- Remove the potatoes and onions with a slotted spoon and drain, reserving about 2 tablespoons of the oil in the skillet.
- Whisk the eggs in a large bowl with a pinch of sea salt, then fold in the warm potato-onion mixture and let rest for 5-10 minutes so the potatoes absorb the egg.
- Reheat the skillet with the reserved oil over medium-low heat, pour in the mixture, and cook for 6-8 minutes until the edges are set and the bottom is golden.
- Place a large flat plate over the skillet, confidently invert the tortilla onto the plate, then slide it back into the pan cooked-side up and cook another 3-4 minutes until just set through.
- Let rest 5 minutes, garnish with chopped parsley, and serve warm or at room temperature.
