Instructions

  1. If the dates feel dry or hard, soak them in warm water for 10 minutes, then drain and pat dry.
  2. Add the raw almonds and cashews to a food processor and pulse 8–10 times until coarsely chopped into pea-sized pieces. Do not over-process into a flour. Transfer to a bowl.
  3. Add the pitted dates to the food processor and process until they form a smooth, sticky paste, about 1–2 minutes. Scrape down the sides as needed.
  4. Return the chopped nuts to the food processor with the date paste. Add raw cacao powder, egg white protein powder, cocoa nibs, vanilla extract, and sea salt.
  5. Process until the mixture comes together into a thick, cohesive dough that holds together when squeezed. If it's too dry, add a date or two; if too wet, add a tablespoon of almond flour.
  6. Line an 8x8-inch baking pan or loaf pan with parchment paper. Press the mixture firmly and evenly into the pan, about 3/4 inch thick.
  7. Sprinkle flaky sea salt over the top and press lightly.
  8. Refrigerate for at least 2 hours until firm, then cut into 8 bars. Wrap individually in parchment and refrigerate up to 2 weeks, or freeze up to 3 months.
