What you'll need
- Food processor — Blends cracker dough and energy bar bases in seconds — hard to do by hand.
- Silicone baking mat — Roll cracker dough directly on the mat, then bake — nothing sticks, no mess.
- Rolling pin — Roll crackers and cookie dough to an even, thin thickness for uniform baking.
- Kitchen scale — Snack recipes — especially bars and crackers — are far more consistent by weight than volume.
Instructions
- Preheat the oven to 350°F (180°C). Line two baking sheets with parchment paper.
- Combine oats, sliced almonds, coconut flour, and a pinch of salt in a large bowl. Mix well.
- In another bowl, whisk together honey, almond butter, avocado oil, maple syrup, and vanilla extract until smooth.
- Add the wet ingredients to the dry mixture and stir until well combined, forming a doughy consistency.
- Divide the dough into 24 equal parts. Roll each part into a ball and flatten them slightly into rounds about 1/8 inch thick on parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool completely on baking sheets.
- Once cooled, sandwich two cookies with a small spoonful of melted dark chocolate chips in between. Press gently to seal.
- Store in an air-tight container at room temperature for up to 1 week.
