Carbon steel is what most professional kitchens use instead of cast iron — same material, roughly half the weight, and faster to heat and cool. The tradeoff is that it requires seasoning and reacts with acidic foods until fully cured. Once broken in, it rivals the best non-stick without any coating.

New carbon steel arrives either bare or with a factory finish. Bare pans need an initial seasoning pass in the oven. Pans with a beeswax finish — like de Buyer Mineral B — come partially cured and build seasoning faster. Avoid any carbon steel with a clear lacquer coating; it needs to be burned off before use.
